Grilled Chicken and Bean Salad

In an attempt to fix my waist, I dedcide to look at some of the food selections that appear in the various health magazines that I read.

This weeks selection hails from Muscle and Fitness, May 2005 (I've been clipping for a while). It's actually really good. I made two small changes to the recipe (both having to do with the dressing). To avoid all the HFCS, I used a low fat catalina dressing instead of the fat free french.

I really liked this salad, and although Sara said she liked the salad, she had to pass because of the onions. Pregnancy has affliceted her with some rough heartburn, so she decided to pass after a few bites. She said that she would have it again, though, so it gets the wife seal of approval as well.

My one complaint about this recipe is that it calls for CANS of the beans, which means you can't cut the recipe down without significant work or storage. It says that it keeps 2-3 days covered in the fridge and without Sara's help I couldn't get through the entire bowl of salad myself, so a little less than half went to waste.

Grilled Chicken and Bean Salad

  • 1 can Whole Green Beans (16oz.), drained
  • 1 can garbanzo beans (15oz.), drained
  • 1 can kidney beans(15oz.), drained
  • 2 grilled chiken breasts (8oz each), chopped
  • 1 can whole-kernal corn (12oz.), drained
  • 1 medium red onion, chopped
  • 1 cup fat-free French salad dressing
Rinse beans w/ cold water in a colander and then drain thoroughly. In a large bowl, combine the chicken, corn, onions and beans. add salad dressing and toss to combine. Cover and marinate overnight. Salad lasts 2-3 days when refrigerated. Makes eight (8) servings.
